
Chicken Alfredo-Stuffed Potato
Ingredients:
1 Cup Milk
2 Tablespoons Butter
1 Cup Parmesan Cheese
1/2 Package Cream Cheese
2 Tablespoons finely minced garlic (Or about two cloves)
Salt and pepper to taste
4-5 baked potatoes
Veggie of choice, cooked (we love broccoli!)
Directions:
- Melt butter over medium heat in saucepan.
- Add in garlic and stir occasionally until softened and fragrant. Be careful not to let it burn.
- Add in cream cheese and whisk until a smooth consistency
- Gradually add in milk, about 1/4 cup at a time, whisking thoroughly to keep it smooth
- Add in Parmesan, salt and pepper and stir until cheese is completely melted
- Add in cooked chicken and allow to cook for 2-3 minutes
- Slice open baked potato, pour sauce on top, add veggies and enjoy!
This recipe takes about 20 minutes total and yielded enough for 5 small potatoes. Great as a meal by itself, even better with garlic bread!
