Chicken Alfredo Stuffed Potato Recipe

Uh-oh.  Thirty minutes before dinner and I completely forgot to go to the store.  Normally this wouldn't be a problem, as I usually keep the ingredients for all my go-to meals like meatloaf and tacos... but apparently this wasn't the case last night.  Seemed like every idea I had for supper was missing at least one vital ingredient. So I decided to improvise - and came up with something that the entire family loved!


Chicken Alfredo-Stuffed Potato


Ingredients:
2 boneless, skinless chicken breasts (cubed and cooked)
1 Cup Milk
2 Tablespoons Butter
1 Cup Parmesan Cheese
1/2 Package Cream Cheese
2 Tablespoons finely minced garlic (Or about two cloves)
Salt and pepper to taste
4-5 baked potatoes
Veggie of choice, cooked (we love broccoli!)

Directions:

  1. Melt butter over medium heat in saucepan.
  2. Add in garlic and stir occasionally until softened and fragrant.  Be careful not to let it burn.
  3. Add in cream cheese and whisk until a smooth consistency
  4. Gradually add in milk, about 1/4 cup at a time, whisking thoroughly to keep it smooth
  5. Add in Parmesan, salt and pepper and stir until cheese is completely melted
  6. Add in cooked chicken and allow to cook for 2-3 minutes
  7. Slice open baked potato, pour sauce on top, add veggies and enjoy!


This recipe takes about 20 minutes total and yielded enough for 5 small potatoes.  Great as a meal by itself, even better with garlic bread!
