Creamy Lemon Angel Hair Pasta Recipe

Summer is almost here, and with the 80° temps we've been having, it feels like it’s already arrived. The problem (at least in my household) with hot weather is that no one has an appetite, and I certainly don’t have the energy to whip up a five-course meal.  That’s why I love to look for simple recipes that don’t take much prep time and that are filling without being too heavy.

Today I want to share with you one of my new favorites – Creamy Lemon Angel Hair Pasta.  This meatless pasta dish has just enough lemon to taste like summer, and is an easy recipe that anyone can make!


Creamy Lemon Pasta Recipe


What you'll need:
1 Tablespoon Minced Garlic
3 Tablespoons extra virgin olive oil 
1 Tablespoons butter
16 oz angel hair pasta
1 lemon (juiced)
1 16 ounce container of sour cream
Coarse salt and pepper to taste


How to make it:

  • Add pasta to boiling water and cook as directed until al dente.
  • Heat olive oil and butter over medium heat until butter is melted.
  • Add minced garlic and stir continuously for about 2 minutes (garlic will get really fragrant)
  • Add in ¼ cup of lemon juice and remove from heat
  • Stir in sour cream and add salt and pepper to taste (I like mine with a little extra salt, but definitely taste and adjust as necessary)
  • Drain pasta and add into the sauce.   I like to add about a tablespoon of lemon zest at this point to kick up the flavor.
  • Toss together and enjoy!


This dish is also amazing as a baked spaghetti as well – to do that, I just dump everything into a casserole dish after tossing together and bake at 350° for 20 minutes.  Add a generous amount of Parmesan cheese and bake for another 5.  Top with more lemon zest!

I love to serve it with some toasted french bread and broccoli.
